Ridge gourd curry with steamed rice.

Gourd curry is one of the most simple veggie curry imaginable and hardly takes 20 mins to prep right from chopping the veggies to putting it on the plate.
Here’s how I cook it:
Crackling some cumin seeds in 2 tbsp hot mustard oil, adding 2medium-sized chopped onions to it, and sauteed until golden brown (omg, can’t believe I said itπ¬, quite a chef vibe thereππͺ). Next, add 2 medium-sized copped/slit green chilies and the dry spices of choice. Mine as always, red chili powder, coriander powder & turmeric powder (based on taste, though I mostly put 1 teaspoon of each) and let it get soaked in with frying onions for 1 min. Then add chopped gourd to the mix and stir well to get everything together and cover it with lif. Put it on simmer for 2-3 mins and keep checking in b/w and repeat until you see them soft. Lastly, add 1 big chopped tomato to the mix cook everything until all ingredients start looking sufficiently soft & cooked.
And that’s it! Eat it with steamed rice or with chapati, it tastes great anywayπ€€π
